Wedding Recipe

Wedding Recipe

By: Gerard Gaspillo

There are soooo many great dishes to serve that it becomes very hard to choose which ones to serve. What I will be writing today will only be suggestions to what you could serve; you still have the call on what you want to serve on your wedding! But if still haven’t got a clue, here are some unique and (pretty) easy to prepare dishes:
Biscochos De Vino (Mexican Wedding Cookies) - Now, this is a very unique dish! Because, well, who serves cookies in a wedding?
You will need:
1 lb. lard
1 cup sugar
1 tablespoon crushed whole cinnamon
1 teaspoon crushed anise seed
2 eggs
6 1/2 cup flour
1 jigger of wine (any kind)
cinnamon-sugar mixture
First, preheat the oven to 400 F. Crush the anise seed and the whole cinnamon. Next, beat into a cream the lard and sugar. Then, add flour, eggs, cinnamon, anise, and wine. Mix with your HANDS. Finally, put in on a board and roll it evenly into your desired thickness (preferably ½ inch thick). Cut into your desired shapes then place the cut dough into an ungreased sheet and set the temperature at 400 F for 15 minutes. Now, this is the most important part because you have to get it just right; let it bake until it is set, not brown! Watch closely to avoid mistakes. Lastly, remove it from the cookie sheet and drench it in the cinnamon-sugar mixture and let it cool.
Hors dÓuevre (stuffed eggs) – Don’t let the name fool you! This is actually easy to prepare and very practical too! Also, keep in mind that you the standard serving per person in your wedding is 4 to 6 servings so you may have to make a lot!
You will need:
6 hard boiled eggs
¼ Cup of mayonnaise
¼ teaspoon dried ground mustard
¼ teaspoon white vinegar
Salt
Pepper
Paprika (optional)
First, peel the hardboiled eggs and slice them in half. Take out the yellow part and put in a clean bowl. Add the mayonnaise, ground mustard, vinegar, salt and pepper. Mash until everything is mixed. Get the hardboiled eggs with the little pocket face up. Place the mixture in the little pocket and if you’re able, make a little mound for design. Lastly, if you have paprika or any other herbs to sprinkle, do so! You can do whatever design you want! Remember, this is the basic recipe. You can add more ingredients to make it look more elegant!
